“ Kaiseki cuisine ” was originally prepared for ascetic practice to makeshift the hunger of Zen-Buddhist monks.
The term “ Kaiseki ” derives from the small heated stone that Zen monks held against their empty stomachs during long hours of fastening when meditating.
Later influenced by the famous master of tea ceremony, Sen-no-Rikyu, it became the simple but sophisticated dishes to soften the stimulus of strong green tea to the stomach served before formal tea ceremonies and “ Kaiseki cuisine ” means food and dishes selected so as to be expressive of the season consisting of one soup with three subsidiary food articles.

The food is served and eaten piece by piece according to meticulously prescribed rules.
It is proper manners not to leave any food uneaten. Nowadays the number of articles in the menu is preferable odd number from three to 13.
